Restaurant in Las Cruces
Hotel Encanto de Las Cruces is excited to announce the opening of Mezcla: our new on-site restaurant. Mezcla is inspired by the ancient highway, El Camino Real, and the many cultures that traversed along its path throughout history. Along with the many footsteps that cover its journey, the Camino Real’s trade route allowed for the cross-cultural exchange of delicious cuisines, resulting in a beautiful blend of multicultural recipes to be created.
Chef Aaron Spring
Native New Mexican, Chef Aaron Spring, begin his culinary journey working under numerous international chefs at the Hyatt Tamaya Resort and the Route 66 Casino, which inspired his “Southwest meets the world” approach to food. He then moved to Virginia Beach, where he served as the Executive Chef of The Historic Chamberlain Resort, of the Wyndham Virginia Beach Oceanfront, and also as Owner/Operator of the MOSAIC Café & Catering. He relocated back to the Southwest in December 2017 where he oversaw the food & beverage operations of both the Doubletree Downtown El Paso and the Marriott Downtown El Paso. He joined Heritage Hotels as the Executive Chef of Hotel Encanto de Las Cruces in May 2020.
